Organic Paleo Ketchup May 7, 2013

Finally got around to trying this, after using up the organic ketchup I bought several months ago but planned to replace with homemade once we used it up since it’s made with agave nectar, which is highly processed. I’ve found several recipes on-line, but most are more complicated and made with more spices than I know the 7-year-old would like. I have to admit this came out a bit more like a marinara dip than ketchup, but it’s not bad. Might use a little less garlic powder and a little more honey next time. Once I perfect it, I’ll also increase the amounts. This made about half a bottle (roughly 12 ounces).

Ingredients:
6-oz can organic tomato paste (read label to check for additives and preservatives!)
6 ounces of water (fill empty tomato paste can)
1 tbsp organic vinegar
1/2 tsp organic garlic powder
1/2 tsp organic onion powder
1/2 tsp organic raw honey

In medium sized bowl, add all ingredients and whisk until well mixed. Spoon into squeeze bottle if desired, and refrigerate overnight for flavors to mix.

Paleo-ish Thanksgiving Feast In the Making November 21, 2012

Recipes and photos to come after the holiday, but it’s been a while since I last posted and I figured I’d share what our menu will be now that I am officially a “Paleo convert” — the challenge ended on Sunday and the small amounts of grain that I reintroduced definitely had an impact. Dairy doesn’t seem to be as much of an issue for me, but cutting it out has been easy enough that I don’t see myself going back to it, at least not more than occasionally. Same goes for refined sugar — now that I know how it makes me feel, and how much better I feel without it, it feels like a no-brainer.

All that said, there will be some “cheating” tomorrow, no question. I’ve been incorporating a lot more butter than is normally considered Paleo, though all else has been fairly in line with the Paleo lifestyle, including the desserts. I’m pretty excited to enjoy the fruits of my labor! On the menu and in various stages of preparation are the following appetizers and dishes:

Sliced Italian meats
Raw veggies and fresh guacamole
Red grapes
Mushrooms wrapped in bacon
Asparagus wrapped in bacon
Kale chips
Upside down turkey
Roasted sweet potatoes
Mashed cauliflower
Paleo cranberry sauce
Roasted/mashed butternut squash
Mashed turnips
Roasted asparagus
Paleo pumpkin pie
Paleo apple crisp
Paleo(ish) dark chocolate brownies

There will also be corn (for the kids), gravy, stuffing, mashed potatoes, and whole wheat dinner rolls, but I don’t plan on partaking in any of those. I’ll be plenty satisfied with all else!! Happy Thanksgiving to all in the US!
