Coconut Banana Muffins April 20, 2015

Didn’t capture a picture, but tried a new muffin recipe this weekend since I’d run out of almond flour yet had plenty of coconut flour to spare. Didn’t love these quite as much, but they weren’t bad. Not overly sweet, of course, but the chocolate chips helped. Might add some honey if I make these again. The 9-year-old approved, as did the new kids (and wonderful man) in our lives! 🙂

Ingredients
5 Eggs
2-3 ripe bananas
¼ cup melted butter
½ cup coconut flour
¼ cup organic milled flax seed
¼ cup Enjoy Life mini chocolate chips
1 tsp baking soda
1 tsp vanilla
1 tbsp almond milk

Preheat oven to 400 degrees and prepare muffin tin and/or liners (grease with butter or coconut oil if needed). Whisk eggs, mash bananas, and mix all ingredients well in a medium sized bowl. Pour into muffin tin or liners (I love the individual silicone muffin liners — no need to grease for this recipe and you can throw them in the dishwasher after). Bake for 15-20 minutes, until slightly browned and set in the middle.
