This is possibly the BEST thing I have EVER made, Paleo or otherwise. Not only did it get the thumbs up from the 7-year-old, but my dad said I finally made something Paleo that he and my mom really like! 😀

This is so good as a snack paired with a glass of almond milk, or in a bowl with almond milk poured over it. I went light on the coconut for our taste but more could be added, along with other kinds of nuts.

Ingredients:
1 cup almond flour/meal
2 tsp cinnamon
1/2 tsp salt
1/3 cup grass-fed butter (or coconut oil)
1/4 cup honey
2 tsp vanilla extract
1/4 cup shredded coconut
1/3 cup raw sunflower seeds
1/3 cup raw pepitas (pumpkin seeds)
1/3 cup raw sliced almonds

Preheat oven to 300 degrees F. Melt butter or oil on medium heat. Combine almond flour, cinnamon, and salt in a large bowl and add melted butter/oil, honey, and vanilla; blend well. Mix in shredded coconut, seeds, and nuts (additional nuts of other varieties can also be added). Spread mixture onto parchment paper on a baking sheet. Bake for 30-35 minutes, tossing every 10 minutes. Remove from oven and allow to cool before serving. Store in an air tight container.

Yet Another Banana Bread… February 18, 2013

What can I say…variety is the spice of life! Just felt like trying a slightly different recipe since I’d just made our other favorite banana bread recipe last week and felt like something different but had three over-ripe bananas asking to be baked! This came out well. I made 3 mini loaves, one without chocolate chips and two with…two thumbs up form the seven-year-old on the latter!

Ingredients:
3 cups almond flour or meal
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp baking powder
3 eggs
2-3 ripe bananas, mashed
1/2 cup raw honey
1 tsp vanilla extract
1/4 cup chopped nuts or dark chocolate chips (optional)

Preheat oven to 400 degrees F. Grease a 12 muffin tin, bread loaf pan, or three mini-loaf pans with coconut oil or grass-fed butter. Mix dry ingredients in a large bowl. Mix wet ingredients in a medium bowl in order listed. Add wet mixture to dry mixture. Stir to combine and add in nuts or chocolate chips if desired. Fill muffin cups or pan(s) and bake 20 minutes for muffins or 30-40 for breads.
